Chicken and Okra Gumbo: Date Added: 1 May 2011 Ingredients:

1 fryer, cut up as for frying and seasoned
2 1/2 lb. fresh cut okra
2 medium sized onions
1 bell pepper
1/2 stalk celery, chopped fine
1 qrt water
salt and pepper to taste
3 tbsp cooking oil

Cooking Instructions:

In a cast iron pot put cooking oil, okra, onions, bell pepper and celery. Cook on medium heat and stir constantly. Cook until not slimy. When done, add water and serve with rice. You may want to add a little roux.
