Potato and Andouille Soup: Date Added: 1 May 2011 Ingredients:

8 large potatoes, cubed
1 small onion, chopped
1/4 cup celery, chopped
1 tbsp green onion, chopped fine
1 tsp parsley, chopped fine
3 tbsp cooked bacon, chopped fine
3 eggs
1 cup of diced andouille sausage

Cooking Instructions:

Put 3 quarts of water to boil and add the potatoes, onion, and celery. Let simmer for 12-15 minutes and add the green oinions, parsley, bacon and andouille. After 20-30 minutes crack and drop the eggs into the soup and stir.
